I will know if it's interest what is the best configuration to send email. Let the default configuration, use the mime HTML and use gmail approach or sendmail ?

With my experience. if you are under linux, it's better to use send mail. After you can choose if you want to send the email in html in txt.

Now if you want to use Gmail, you must select Gmail in transmission. be careful on the port try 25 or 587.

Recently, I have been a problem with sendmail. I decided to use Gmail than sendmail.

I think it's better to ask at your hoster about the best configuration. Some block sendmail I think

Try to avoid sendmail. To achieve proper email credentials (SPF,DKIM,DMARC) use SMTP.

Trust me, you won't regret doing so and (maybe) your hosting provider will be grateful that you do.
